*Disclaimer* Performance Hospitality Management invited the team to spend one (1) night at Holiday Inn and Suites Across From Universal.
As we start our coverage of hotels off-site but nearby Universal Orlando, we made our way to Holiday Inn and Suites. The official title of this hotel is the Holiday Inn and Suites Across From  Univeral Orlando. As the name indicates, this hotel resides within a reasonable walking distance. This Holiday Inn classifies as a small to mid-sized hotel with 390 rooms. The hotel has a modern look and feel. Also, the hotel has a unique feature, being connected via an indoor walkway to a TGI Friday. We’ll talk about that more soon. In addition, this Holiday Inn and Suites offers 13,000 square feet of event space for around 400 eventgoers. ​

With it being Fat Tuesday, we cannot go without talking about a classic. The French settlers brought beignets with them as they migrated to the eastern coast of Canada to an area called Acadia in the 17th century. Unfortunately, many Acadians were forced to migrate as the British came to control their area. As a result, many Arcadians settled in Louisiana. Their descendants became known as Cajuns. With their migration to the southern USA, they brought their culture, language,and cuisine.  The mighty beignet continues to display that cuisine. During this time of year, you can find beignets in many places. Today, we are going to decide which beignets are better between the 2022 Universal Studios Florida Mardi Gras version in comparison to Disney’s Port Orleans Resort version.

Apple-Sausage Focaccia Stuffing from Loews Royal Pacific Resort

1 ½ Sticks of Unsalted Butter (12 tablespoons)
4-6 Granny Smith Apples (cored, peeled and cut into 1 inch cubes – 4 Large or 6 Small)
¼ cup Apple Cider Vinegar
¼ cup Apple Juice
½ cup Chicken Stock (low sodium is best)
6 Celery Stalks (halved lengthwise, thinly sliced crosswise)
1 Yellow Onion Large (peeled, finely diced)1 lb Italian Sausage (casing removed)
12 inch Plain or Herb Focaccia Bread (cut into ½ inch cubes)
1 tbsp Thyme (finely chopped)
1 tbsp Sage (finely chopped)
1 tbsp Rosemary (finely chopped)
To taste Kosher Salt and Ground White Pepper

    After watching the Harry Potter movies for 246th time, you plan to visit Universal Orlando for vacation. You decided you want to dine at The Leaky Cauldron (that is in London, you know) and the Three Broomsticks. You want to enjoy every version of butterbeer. You are saddened to learn there is not a Wizarding World themed hotel, so you need to decide where to stay. You scrutinize prices of the “Premier” level hotels. You decide that your budget cannot handle those price points since you do not have a “philosopher’s stone” to turn lead into gold. You realize that your budget is closer to a Weasley family budget.
    Fortunately for you, Universal Orlando has well themed resorts for lower budgets. Universal Orlando has defined these resorts into two categories: Value and Value Plus. As you might imagine, values are the lowest cost resorts at Universal Orlando and value plus are slightly higher priced but with more features.
