Tony's Amazing Ropa Vieja Recipe

​Today we visit Sous Chef Anthony "Tony" Piedra at American Kitchen Bar & Grill. In celebration of National Hispanic Heritage Month(September 15th through October 15th), Chef presents us Tony his recipe for Ropa Vieja.

Ingredients:
  • 1 TBS of Olive Oil
  • 2LBS of Beer Flank Steak
  • 3 Garlic Cloves, Minced
  • 1 Large Yellow Onion, Chopped
  • 1 Green Pepper, Sliced into Strips
  • 1 Bunch of Cilantro, Chopped
  • 1 TSP of Ground Cumin
  • 8 OZ can of Tomato Juice
  • 6 OZ can Crushed Tomatoes
  • 5 Spanish Olives, Sliced
  • Salt & Pepper to taste
  • 1 cup Burgundy Red Wine
  • 1 QT Beef Stock
  • 1 QT Chicken Stock
Directions:
Heat olive oil in a large pan over medium-high heat. Next, add flank steak and cook until brown (about 4 minutes per side). Next, add the minced garlic, onions, and peppers. Pour red wine and reduce it. Once the ingredients are glazed, add the chicken and beef stock. Then add the rest of the ingredients. Salt and Pepper to taste. Bring to a boil, then quickly turn down to a simmer. Cook for two hours until meat is tender and soft enough to shred. Serve over white rice.
The influence of Piedra's father being a Cuban native and his mother a Puerto Rican, undoubtedly makes this dish a special part of his heritage. Keeping true to his heritage, Chef Anthony's Ropa Vieja recipe features flank steak in a flavorful tomato sauce, burgundy red wine, garlic, and more. What seems to be a simple recipe is packed with flavor that uncovers his Latin American culinary influence. 
 Chef Anthony preaches, "You need to start with flavor," meaning the base of what you are preparing is everything. He also shares his secret to, "Season during cooking and after." Chef Anthony is well-rounded and implements his own fusion to his dishes and concepts, but often sticks to Caribbean-inspired flavors and ingredients like achiote, sazón, adobo, sour orange, limes, cilantro, garlic and oregano. On a night full of frights and delights, guests can dawn their best All Hallow’ Eve attire and enjoy some spook-tacular drinks at American Kitchen. Adult trick-or-treaters can sip on:
